Mike’s Mighty Good Craft Ramen Review & Recipe

It’s been awhile but I am back and have some exciting new ideas and content to share! We can dive into that another day, but for today let’s keep it short and sweet.

I love many things in life, but among some of the things I love the most are noodles. Noodles of all shapes, sizes, and origin – I don’t discriminate. It’s the richness of the broth, the velvety slurp, and the chewy texture that keeps me coming back for more. I’ve recently discovered Mike/s Mighty Good Craft Ramen and it has truly changed the game.

Think convenience of instant ramen, but depth & flavor of ramen broth that has simmered delicately for hours getting better and better. Taste is always #1 but tied for first is also the quality of the ingredients. The organic noodles (made from scratch) are steamed instead of fried (did you know that most instant ramen noodles are deep fried?), and they use simple, real ingredients and deliver this insanely rich ramen soup in minutes. These noodles are so delicious they do not taste “instant” at all. It’s everything you love about restaurant quality ramen that you can enjoy in the comfort of your own home without the guilt and the stigma of “packaged instant noodles”.

You simply cook them as you would any instant noodle, but don’t forget to make it Insta-worthy by crowning your dish with gourmet toppings. I used what I had in my fridge; an assortment of mushrooms, steamed bok choy, fried garlic in avocado oil, and a soft-boiled egg to name a few. Use what you have or eat these noodles straight out of the cute and perfectly packaged pouch and enjoy. They will truly surprise you!

Spicy Tonkotsu Ramen

Yield: 2

Ingredients

  • 2 packs Mike's Mighty Good Craft Ramen (I used 1 Tonkotsu, 1 Spicy Tonkotsu)
  • 2 - 2 1/2 c water
  • Toppings of Choice:
  • Soft boiled egg
  • Garlic clove, sliced thin and lightly fried in avocado oil
  • Sliced green onions
  • Sliced trumpet mushrooms
  • Enoki mushrooms
  • Steamed bok choy
  • Nori strips (seaweed strips)
  • Roasted sesame seeds

Instructions

  1. Cook noodles per package instructions.
  2. In a bowl, place the noodles. Gently ladle in broth, top with toppings of choice. Slurp and enjoy!
