Sheet pan cooking is a quick and simple way to meal prep. Just throw everything onto one cooking sheet, and clean up is a breeze. This technique is a great one to have under you belt too as it is super easy to modify and customize. You can use any protein or vegetable combination you’d like (just cut the pieces about the same size for ensure even cook time), throw it in the oven, and call it a day! If you have vegetables that take less time to cook – throw them in the last few minutes only (like what I did here with the snap peas).

Whole30 – Wonton Meatballs
As I sit here typing, I am 9 days into a Whole30 challenge. As depressing as that makes me (the fact that I’m not even half way done), these Wonton Meatballs are glimmer of light at the end of a long tunnel.
These little guys are not only Whole30 compliant, but are everything you would love about a dumpling – juicy, meaty filling, minus the dumpling wrapper.

Grilled Vietnamese Ginger Chicken
This is such an easy recipe that is full of flavor! It’s a staple marinade that is good on chicken, beef, pork, or fish. It also makes a good marinade base; as you can always add additional ingredients to spruce it up (chopped lemongrass or lime juice are some good go-to’s).
Most Vietnamese marinades contain sugar. You can always use regular sugar, brown sugar, honey, or even apple sauce if you want to add some sweetness. I don’t usually like to add sugar if I can get away without it, so I typically opt out of it, and it’s still plenty tasty.

Bluefin Tuna Poke
Poke (Hawaiian raw fish salad) is incredibly popular right now. It seems like every other week I see a new poke shop pop up around the corner. Really, this is a nonissue for me since I love it! I love the ‘build your own’ poke bowl component of it… that it’s customizable and is relatively healthy. I typically order my poke bowls half white rice, half mixed greens, salmon and octopus, and all the veggies. It’s like a Chipotle for fish lovers.

Oven Roasted Pulled Pork
I have a really hard timeĀ notĀ buying pork when it goes on sale. I found this pork shoulder at Sprouts on sale for $1.39/lbs and I just couldn’t resist. The only catch was… the smallest piece they had was a 9 pound pork shoulder. I figured, 9 pounds isn’t that much. I feed a lot of big hungry guys it shouldn’t be a problem.
Turns on 9 pounds is a lot of meat. Good news? Pulled pork makes the best left overs….

Easy Roasted Mushrooms
I’m always looking for easy sides to throw together to accompany my meal. I love mushrooms and always have a few different varieties in my fridge. Using a mix of different types of mushrooms offers a variety of textures and tastes.
Here, I used all the of mushrooms in my fridge; crimini, fresh shitake, and king trumpet mushrooms. I heated the oven to 425 degrees. Tossed all the mushrooms in a big bowl with a little bit of olive oil and Sauce Goddess Super Chunk Steakhouse Flavor seasoning (find it at Sprouts, Iowa Meats, orĀ hereĀ ).
