Pumpkin Apple Pie with Crumb Topping

Find yourself someone who loves you the way I love this pie.

About two years ago, I had a slice of pie that I haven’t stopped thinking about. It was the Pumpkin-Apple Pie from Julian Pie Company that you can only get seasonally in Julian, CA. In San Diego, you can find Julian Apple Pies at most grocery stores, but they never send out the Pumpkin-Apple with a dutch crumb top. I remember biting into this pie and being blown away by the combination of flavors. The lower layer was a apple pie, and above that was a silky-custardy pumpkin filling adorned with a crumble topping.

I always look for this pie in the fall, hoping Julian Pie Co. started shipping them out - but I still haven’t seen it. I actually haven’t seen it made anywhere else or made by anyone else, and decided it was finally time to try to recreate this dream of a pie….

Grilled Vietnamese Ginger Chicken

This is such an easy recipe that is full of flavor! It’s a staple marinade that is good on chicken, beef, pork, or fish. It also makes a good marinade base; as you can always add additional ingredients to spruce it up (chopped lemongrass or lime juice are some good go-to’s).

Most Vietnamese marinades contain sugar. You can always use regular sugar, brown sugar, honey, or even apple sauce if you want to add some sweetness. I don’t usually like to add sugar if I can get away without it, so I typically opt out of it, and it’s still plenty tasty.

So Good you Won’t Believe it-Chocolate Cake.

I’ve made many cakes in my day. Birthday cakes are my favorite, because it makes people feel special and loved.

It was recently Scott’s birthday and he loves chocolate cake. For our wedding cake (wedding post coming soon) he asked for chocolate cake. For any occasion he asks for chocolate cake. This recipe is from Smitten Kitchen (original recipe found here ). It’s called the “‘I want Chocolate Cake’ Cake” - and that’s exactly what it is. When you just want chocolate cake - no fuss, nothing fancy. This is your cake.

It’s topped with a thick layer of rich, dark chocolatey buttercream and of course, everything tastes better with confetti sprinkles. You will never need to try another chocolate cake recipe after this….

Cheesy Italian Arancini

During the spring of last year, I took my first trip to New York. Scott and I went to one of his favorite Italian restaurants, and I had for the very first time, Arancini. These fried risotto balls were crispy on the outside, had a creamy risotto interior, and oozy-gooey cheese in the middle. How have I never heard of these before? Are they an East Coast thing? Well, they’re surely an Italian thing, as Scott grew up eating these during the holidays (my family did not have this delicacy on the holidays for obvious reasons…being that we’re not Italian 😉 ).

Bluefin Tuna Poke

Poke (Hawaiian raw fish salad) is incredibly popular right now. It seems like every other week I see a new poke shop pop up around the corner. Really, this is a nonissue for me since I love it! I love the ‘build your own’ poke bowl component of it… that it’s customizable and is relatively healthy. I typically order my poke bowls half white rice, half mixed greens, salmon and octopus, and all the veggies. It’s like a Chipotle for fish lovers.

Soft Pretzels

I can’t believe summer is ending, which means fall is coming and it is now football season.

I wanted to make a snack for Scott while he binges on Sunday football. I have to admit, I somewhat dread football season (which could very well be his most favorite thing ever). Oven Roasted Pulled Pork

I have a really hard time not buying pork when it goes on sale. I found this pork shoulder at Sprouts on sale for $1.39/lbs and I just couldn’t resist. The only catch was… the smallest piece they had was a 9 pound pork shoulder. I figured, 9 pounds isn’t that much. I feed a lot of big hungry guys it shouldn’t be a problem.

Turns on 9 pounds is a lot of meat. Good news? Pulled pork makes the best left overs….

Lemon Blueberry Scones

Ever since a recent trip to Marlene’s Teas and Cakes for afternoon tea, I have been obsessed with scones. To me, they resemble a delicate sweet biscuit. Crumbly and moist, yet with a satisfyingly crunchy sugar top. These blueberry scones are made with a combination of whole wheat flour and all purpose flour. The whole wheat component allows for a a more sturdy scone, yet the all purpose flour makes it so the finished product is still light and airy.
