A light, refreshing yet satisfying dip that you can enjoy without the guilt! I literally threw everything in my food processor and call it a day. The dip is ready in under 10 minutes and you can get on with your day. 🙂
Here’s a recipe for a quick and easy appetizer or snack with ingredients you likely already have on hand (I was inspired by a friend’s mom who recently made a delicious dip based with edamame). I’ve made it with and without avocado (it’s better with avocado) – but you can also easily add a few ingredients to spruce it up if you feel like being fancy. Miso paste, wasabi, or hot sauce are all possible (and welcome!) additions!

Ingredients
- 1 - 12 oz bag frozen shelled edamame
- 1/4 cup avocado oil
- 1/2 cup water (+ a touch more if needed)
- 1 clove, garlic
- 1 green onion, roughly chopped
- 1 tsp garlic powder
- 1 T Trader Joe's Everything but the Bagel Seasoning
- 1 lemon, fresh squeezed
- 1 medium-sized avocado
- salt & pepper to taste
Instructions
- In a small sauce pan, bring a pot of water to boil.
- Once water is boiling, add frozen edamame. Boil for 3 minutes, drain, and run under cold water. Drain completely.
- In a food processor, combine cooked edamame, and the remaining ingredients. Process until smooth. You may need to gradually add more water if the mixture is not coming together - but don't add too much. Season to taste, serve with crackers or raw vegetables.
