This Chicken Tortilla Soup is so lazy it doesn’t even have tortillas in it! Just kidding 🙂 I love the taste of tortilla soup but wanted to make it low carb.

Grilled Vietnamese Ginger Chicken

November 15, 2017 by amyvsfood Leave a Comment

This is such an easy recipe that is full of flavor! It’s a staple marinade that is good on chicken, beef, pork, or fish. It also makes a good marinade base; as you can always add additional ingredients to spruce it up (chopped lemongrass or lime juice are some good go-to’s).

Most Vietnamese marinades contain sugar. You can always use regular sugar, brown sugar, honey, or even apple sauce if you want to add some sweetness. I don’t usually like to add sugar if I can get away without it, so I typically opt out of it, and it’s still plenty tasty.

Grilled Hot Wings

September 30, 2016 by amyvsfood 2 Comments

I love having friends over on Sundays to watch football. What I love the most is that it gives us a chance to get together, and also gives me a number of taste testers.

Wings and football pair perfectly together. They’re easy and fun finger food, and above everything else, taste really, really good. They are also extremely versatile and can be dressed up in every which way. Chicken wings can be fried, grilled, or baked, and who doesn’t love dipping anything into ranch or bleu cheese dressing?

Phở Gà

September 15, 2016 by amyvsfood Leave a Comment

I have strong ties for Phở bò, or “beef pho” but sometimes I just don’t have the time. Phở gà, or “chicken pho” offers a slightly more delicate broth with sweet aromatics that still hits the spot, but in a fraction of the time.
