Chicken salad is a quick and easy snack, appetizer, or meal.
I usually make it with leftover chicken, but it is equally as good (and much faster) with a store bought rotisserie chicken.
Grab your favorite mayo (find my favorite mayo recipe here), shredded chicken, the rest of the ingredients, and you’re ready to go! You can serve it with crackers, fresh veggies (celery sticks, sliced cucumber, and bell pepper slices to name a few), on lettuce cups, on a salad, or of course, in a sandwich.
Other Add-ins we Love:
- Toasted slivered almonds or chopped pecans
- Dried fruit (jumbo golden raisins or cranberries)
- 1 teaspoon curry powder
- Halved cherry tomatoes
- ½ cup homemade mayo or your favorite mayonnaise (I like Chosen Foods 100% Avocado Oil Mayo)
- 1 teaspoon of salt
- Freshly ground black pepper
- ½ teaspoon celery seed
- 1 tablespoon whole grain mustard
- Juice from ½ large lemon
- ¼ cup finely chopped red onion
- 2 tablespoons fresh parsley, chopped
- 1 pound shredded cooked chicken (skin and bones removed)
- 2 stalks of celery, finely diced
- 1 small granny smith apple, cored and chopped into ½ inch dice
- ¼ cup grapes, halved lengthwise
- In a medium sized bowl, add mayonnaise, salt, pepper, celery seed, and mustard. Mix to combine, and taste for additional salt or pepper.
- In a separate larger bowl, add diced apple and squeeze fresh lemon over to keep apples from turning brown. Add the red onion, parsley, celery, cooked chicken, and grapes.
- Add the mayonnaise and mix to combine.
