The Instant Pot is truly my favorite kitchen gadget / appliance and the item that gets the most use, love, and attention from your’s truly.
I use my IP to make almost everything (especially since my stove was out of commission for the past 3 months). It makes EVERYTHING in a fraction of the time – but do I really need to sell you on it? If you don’t have one already…just get one. It will change your life for the better.
Now onto this soup…I love lentil soup! It’s simple, comforting, and a alternative when you want to switch up your complex carbs. With the IP, you don’t even have to soak the lentils over-night. You can throw them in dry, and save yourself an extra step.
When making this,yes, you could sauté the onions, garlic, celery, etc… but sometimes I just want to be lazy and keep it simple. This recipe? Just dump it in all in an instant pot, set it on High Pressure for 18 minutes, natural release. After the valve has dropped and the pressure has released, add the vegetables that don’t take much time to cook; kale, zucchini, etc. Use the sauté function for a few minutes until kale and zucchini are slightly softened, taste, and enjoy!
Ingredients
- 1 medium yellow onion — small diced
- 4 medium carrots— small diced
- 3 stalks celery— small diced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 1/2 cups dried green lentils
- 4 cloves garlic — minced
- 1 can diced tomatoes
- 4 cups chicken broth
- 3 stalks kale— chopped
- 1 medium zucchini — minced
- 1-2 tablespoon apple cider vinegar
Instructions
- In the Instant Pot, add all ingredients except for kale, zucchini, and apple cider vinegar.
- Cover and seal the Instant Pot and set to cook on high pressure for 18 minutes.
- After 18 minutes of high pressure, allow the cooker to release pressure naturally. This will take about 10 to 15 additional minutes.
- After the pressure has released and valve has dropped; open the lid and stir the soup. Add kale, zucchini, and apple cider vinegar.
- With the lid off, turn on the sauté function and allow soup to simmer for an additional 5-10 minutes to soften the kale and zucchini. At the same time, adjust the soup consistency to your liking - If the soup is too thick, add more water, If too thin, continue to allow the soup to simmer until thickened to desired consistency.
- Taste and adjust the seasonings as desired.
